## Ingredients

- 2 chicken breasts, sliced
- 150g rice or egg noodles
- 3 tbsp peanut butter
- 2 tbsp soy sauce
- 1 tbsp sweet chilli sauce
- Juice of 1 lime
- 1cm ginger
- Cucumber, spring onion, coriander, crushed peanuts

## Steps

1. Grill or pan-cook chicken 5–6 min; slice.
2. Cook noodles; drain.
3. Mix peanut butter, soy, chilli, lime, ginger, and water into a sauce; warm.
4. Toss noodles in sauce; top with chicken, cucumber, spring onion.
5. Scatter peanuts and coriander.
