## Ingredients

- 2 salmon fillets, cubed
- 200g silken tofu, cubed
- 150g shiitake mushrooms, sliced
- 1 litre dashi or fish stock
- 3 tbsp white miso paste
- 3cm ginger, sliced
- 2 spring onions, sliced
- Baby pak choy
- Soy sauce

## Steps

1. Simmer stock with ginger 5 min.
2. Add mushrooms and pak choy; cook 3 min.
3. Add salmon; poach 4 min.
4. Add tofu gently; heat 2 min.
5. Whisk in miso (don't boil); add soy; serve with spring onion.
