## Ingredients

- 250g halloumi, sliced
- 200g couscous
- 1 courgette, sliced
- 1 red pepper, sliced
- 1 red onion, wedged
- Olive oil, 1 tsp za'atar

## Steps

1. Roast vegetables with oil and za'atar at 200°C / 400°F for 20 min.
2. Pour boiling water over couscous; cover 5 min; fluff.
3. Stir herbs, lemon, and oil through couscous.
4. Grill halloumi 2 min per side.
5. Serve couscous with vegetables and halloumi.
