## Ingredients

- 6 eggs
- 150g cooked ham, torn
- 150g frozen peas, thawed
- 1 leek, thinly sliced
- 3 tbsp crème fraîche
- 30g Parmesan, grated
- Butter, salt, pepper

## Steps

1. Soften leek in butter in an ovenproof pan 5 min.
2. Beat eggs with crème fraîche, Parmesan, salt, and pepper.
3. Add peas and ham to leek; pour over egg mixture.
4. Cook on hob 3 min; transfer to oven at 180°C / 350°F for 12–15 min.
5. Cool slightly; slice.
