## Ingredients

- 2 salmon fillets
- 2 tbsp harissa paste
- 200g couscous
- 2 roasted red peppers (jar or fresh)
- Large handful spinach
- 4 tbsp Greek yogurt
- Fresh dill
- 1 lemon

## Steps

1. Rub salmon with harissa and a little olive oil; bake at 200°C / 400°F for 12–15 min or pan-cook until just cooked through.
2. Pour boiling water over couscous, cover, rest 5 min, then fluff with a fork.
3. Stir chopped dill, lemon zest, lemon juice, and spinach through the warm couscous.
4. Char or slice the peppers.
5. Mix yogurt with dill, lemon juice, and a pinch of salt for the sauce.
6. Serve salmon over couscous with peppers on the side and yogurt sauce drizzled over.
