## Ingredients

- 2 tbsp white miso paste
- 800ml hot water or dashi stock
- 100g soba noodles
- 200g silken or firm tofu, cubed
- 4 shiitake or chestnut mushrooms, sliced
- 2 eggs
- 2 spring onions, sliced
- 1 tsp soy sauce

## Steps

1. Boil eggs 7 min; cool and halve.
2. Cook soba noodles per packet; drain.
3. Simmer mushrooms in stock for 3 min.
4. Whisk miso into the broth (don't boil after adding miso); add soy sauce.
5. Divide noodles and tofu between bowls; ladle broth and mushrooms over.
6. Top with egg halves and spring onion.
