# Mushroom, Leek & Pearl Barley Soup

## Ingredients

- 300g mixed mushrooms, sliced
- 2 leeks, sliced
- 100g pearl barley, rinsed
- 1.2 litres vegetable stock
- 3 garlic cloves
- 1 tbsp dried porcini (soaked in hot water)
- Fresh thyme, bay, soy sauce
- Olive oil, salt, pepper

## Steps

1. Soften leeks and garlic in oil; add mushrooms and thyme; cook 8 min.
2. Add barley, stock, porcini and their soaking liquid, and bay.
3. Simmer 35 min until barley is tender.
4. Season with soy sauce, salt, and pepper; discard bay.
