## Ingredients

- 4 bone-in chicken thighs
- 1 tin butterbeans, drained
- 1 tin chopped tomatoes
- 3 garlic cloves, sliced
- 1 tsp smoked paprika
- Large handful spinach
- 1 lemon
- Olive oil, salt, pepper

## Steps

1. Season chicken with garlic, paprika, salt, and pepper.
2. Brown chicken skin-side down in an ovenproof pan for 5 min.
3. Add tomatoes, butterbeans, and a splash of stock or water.
4. Roast at 200°C / 400°F for 20 min until chicken is cooked through.
5. Stir in spinach so it wilts into the sauce.
