## Why It Fits

## Ingredients

- 200g pasta (linguine or penne)
- 2 salmon fillets
- 3 tbsp green pesto (jar or homemade)
- 150g cherry tomatoes, halved
- Large handful rocket/arugula
- Parmesan to serve
- Lemon, salt, pepper

## Steps

1. Cook pasta in salted boiling water; reserve a cup of pasta water before draining.
2. Pan-cook salmon 3–4 min per side; flake into chunks.
3. Toss drained pasta with pesto, a splash of pasta water, tomatoes, and rocket.
4. Fold in salmon gently; adjust seasoning.
5. Serve with Parmesan and lemon.
