## Ingredients

- 400g extra-firm tofu, pressed and sliced
- 60g panko breadcrumbs
- 2 tbsp cornflour
- 1 onion, diced; 1 carrot, diced; 3 garlic cloves
- 1 tbsp curry powder; ½ tsp turmeric
- 400ml vegetable stock; 1 tbsp soy sauce; 1 tsp honey
- Cooked rice, shredded white cabbage

## Steps

1. Coat tofu: cornflour, then plant milk, then panko; bake at 200°C / 400°F for 20 min.
2. Soften onion and carrot; add garlic and spices; cook 2 min.
3. Add stock, soy, and honey; simmer 10 min; blend smooth.
4. Serve crispy tofu over rice with katsu sauce and shredded cabbage.
