## Ingredients

- 400g firm tofu, pressed and cubed
- 150g rice noodles
- 1 carrot, julienned
- 1 red pepper, sliced
- 2 tbsp peanut butter
- 2 tbsp soy sauce/tamari
- 1 tbsp rice vinegar
- 1 tsp grated ginger
- 1 garlic clove, grated
- Lime, coriander (cilantro), chilli

## Steps

1. Toss tofu with oil and cornflour; bake at 200°C / 400°F for 20 min until crispy.
2. Cook noodles per packet; drain.
3. Mix peanut butter, soy, vinegar, ginger, garlic, and a splash of water into a sauce.
4. Toss noodles with sauce, carrot, and pepper.
5. Top with tofu, lime, coriander, and chilli.
