## Ingredients

- 2 large courgettes/zucchini
- 300g turkey mince
- 150g cherry tomatoes, halved
- 2 garlic cloves

- 80g mozzarella, torn
- Olive oil, fresh basil

## Steps

1. Halve courgettes lengthways; scoop out centres; chop the flesh.
2. Fry turkey with garlic, herbs, courgette flesh, and tomatoes; season.
3. Fill courgette boats; top with mozzarella.
4. Bake at 190°C / 375°F for 18 min until courgette is tender.
5. Scatter basil.
