Eggs baked in a rich tomato and pepper sauce — Shakshuka-style, ready in under 20 minutes.

Method

  1. 1Soften peppers and garlic in olive oil for 5 min.
  2. 2Add tomatoes, paprika, and cumin; simmer 8 min.
  3. 3Stir in spinach; make 4 wells; crack in eggs.
  4. 4Cover and cook on low heat 5–6 min until whites are just set.
