One-Pan Chicken Thighs, Butterbeans & Greens

Juicy chicken thighs braised with butterbeans, tomatoes, and wilted spinach in one roasting dish.

Method

  1. 1Season chicken with garlic, paprika, salt, and pepper.
  2. 2Brown chicken skin-side down in an ovenproof pan for 5 min.
  3. 3Add tomatoes, butterbeans, and a splash of stock or water.
  4. 4Roast at 200°C / 400°F for 20 min until chicken is cooked through.
  5. 5Stir in spinach so it wilts into the sauce.
  6. 6Finish with a squeeze of lemon and serve straight from the pan.
