Harissa Salmon & Herby Couscous

Spiced salmon over lemon-herb couscous with charred peppers and a cooling yogurt-dill sauce.

Method

  1. 1Rub salmon with harissa and a little olive oil; bake at 200°C / 400°F for 12–15 min or pan-cook until just cooked through.
  2. 2Pour boiling water over couscous, cover, rest 5 min, then fluff with a fork.
  3. 3Stir chopped dill, lemon zest, lemon juice, and spinach through the warm couscous.
  4. 4Char or slice the peppers.
  5. 5Mix yogurt with dill, lemon juice, and a pinch of salt for the sauce.
  6. 6Serve salmon over couscous with peppers on the side and yogurt sauce drizzled over.
