Roasted Beet, Goat's Cheese & Walnut Salad

A classic combination for good reason; walnuts provide omega-3s and goat's cheese adds calcium with a tang that cuts through the sweet beet.

What you need

  • 4 cooked beet, quartered
  • 100g soft goat's cheese
  • 40g walnuts, toasted
  • 80g mixed leaves (arugula, watercress, endive)
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey
  • 3 tbsp olive oil

What to do

  1. 1Whisk balsamic, honey, and oil for the dressing.
  2. 2Toss leaves and beet with dressing.
  3. 3Crumble goat's cheese over; scatter walnuts.
