A warming baked dish of smoky chorizo, Puy lentils, and tomatoes with eggs cracked in for the final minutes.

Method

  1. 1Fry chorizo until crispy; add garlic and paprika; cook 1 min.
  2. 2Add tomatoes and lentils; simmer 8 min.
  3. 3Make 4 wells; crack in eggs.
  4. 4Simmer covered 5–6 min until whites are just set.
  5. 5Scatter parsley; serve with crusty bread.
