Chicken & Mushroom Risotto

Creamy Arborio risotto with tender chicken, earthy mushrooms, and a finish of Parmesan and white wine.

Method

  1. 1Sauté chicken until cooked; set aside.
  2. 2Soften onion and garlic in oil/butter; add mushrooms and thyme; cook 5 min.
  3. 3Add rice; toast 1 min; add wine if using.
  4. 4Add stock one ladle at a time, stirring until absorbed (18–20 min total).
  5. 5Stir in Parmesan and butter; fold in chicken; season.
