Zucchini & Corn Fritters with Herby Yogurt

Fritters make a satisfying lunch from very ordinary ingredients; the yogurt dip adds protein and calcium to what is essentially a vegetable dish.

What you need

  • 2 zucchini, grated
  • 150g corn (canned/frozen)
  • 2 eggs
  • 100g self-rising flour or chickpea flour
  • 50g feta, crumbled
  • Scallions
  • 4 tbsp Greek yogurt, fresh mint, lemon (for dip)
  • Olive oil, salt, pepper

What to do

  1. 1Squeeze moisture from grated zucchini in a tea towel.
  2. 2Mix zucchini, corn, eggs, flour, feta, scallion, salt, and pepper.
  3. 3Fry tablespoons of batter in oil over medium heat 3 min per side.
  4. 4Mix yogurt with mint and lemon.
  5. 5Serve fritters with herby yogurt.
