Halloumi & Roast Vegetable Couscous Bowl

Grilled halloumi with roasted Mediterranean vegetables over herby couscous with a lemon dressing.

Method

  1. 1Roast vegetables with oil and za'atar at 200°C / 400°F for 20 min.
  2. 2Pour boiling water over couscous; cover 5 min; fluff.
  3. 3Stir herbs, lemon, and oil through couscous.
  4. 4Grill halloumi 2 min per side.
  5. 5Serve couscous with vegetables and halloumi.
