Ham, Pea & Leek Frittata

A hearty oven-baked frittata with cooked ham, sweet peas, and softened leek — perfect hot or cold.

Method

  1. 1Soften leek in butter in an ovenproof pan 5 min.
  2. 2Beat eggs with crème fraîche, Parmesan, salt, and pepper.
  3. 3Add peas and ham to leek; pour over egg mixture.
  4. 4Cook on hob 3 min; transfer to oven at 180°C / 350°F for 12–15 min.
  5. 5Cool slightly; slice.
