Fluffy quinoa with roasted sweet potato, red onion, beetroot, and a tahini-lemon dressing.

Method

  1. 1Cook quinoa per packet; cool slightly.
  2. 2Roast sweet potato and red onion with oil and salt at 200°C / 400°F for 20 min.
  3. 3Whisk tahini, lemon, garlic, and 3 tbsp water into a dressing.
  4. 4Combine quinoa, roast veg, and beetroot; drizzle dressing; scatter herbs.
