Crispy sweet potato skins filled with black beans, cheddar, jalapeño, and soured cream — a colourful snack or starter.

Method

  1. 1Bake sweet potatoes at 200°C / 400°F for 45–50 min.
  2. 2Halve; scoop out most of the flesh (use in another dish).
  3. 3Fill skins with black beans; top with cheese and jalapeño.
  4. 4Bake 10 min more until cheese melts.
  5. 5Serve with soured cream and chives.
