Stuffed Peppers with Quinoa & Feta

Bell peppers filled with lemony quinoa, sun-dried tomatoes, spinach, and crumbled feta, then baked until tender.

Method

  1. 1Cook quinoa; mix with feta, spinach, sun-dried tomatoes, pine nuts, lemon, and oil.
  2. 2Fill pepper halves with quinoa mixture; place in a baking dish.
  3. 3Bake at 190°C / 375°F for 20–25 min until peppers are tender.
  4. 4Serve with a green salad.
