Panko-crusted crispy baked tofu over rice with a mild, fragrant katsu curry sauce.

Method

  1. 1Coat tofu: cornflour, then plant milk, then panko; bake at 200°C / 400°F for 20 min.
  2. 2Soften onion and carrot; add garlic and spices; cook 2 min.
  3. 3Add stock, soy, and honey; simmer 10 min; blend smooth.
  4. 4Serve crispy tofu over rice with katsu sauce and shredded cabbage.
