Crispy Tofu Peanut Noodles

Oven-crispy tofu over rice noodles tossed in a rich peanut-ginger sauce with crunchy vegetables.

Method

  1. 1Toss tofu with oil and cornflour; bake at 200°C / 400°F for 20 min until crispy.
  2. 2Cook noodles per packet; drain.
  3. 3Mix peanut butter, soy, vinegar, ginger, garlic, and a splash of water into a sauce.
  4. 4Toss noodles with sauce, carrot, and pepper.
  5. 5Top with tofu, lime, coriander, and chilli.
