Chicken, Mushroom & Leek Filo Pie

A lighter take on chicken pie using filo pastry — a crispy top over a creamy chicken, mushroom, and leek filling.

Method

  1. 1Soften leeks and mushrooms with thyme; add chicken, crème fraîche, and mustard; season.
  2. 2Spoon into a baking dish.
  3. 3Scrunch 4 sheets of filo over the top; brush with melted butter.
  4. 4Bake at 200°C / 400°F for 20 min until pastry is golden.
