Warm Barley & Roast Tomato Salad

Nutty pearl barley with slow-roasted cherry tomatoes, rocket, Parmesan, and a sherry vinegar dressing.

Method

  1. 1Halve tomatoes; roast with oil and salt at 180°C / 350°F for 20 min.
  2. 2Warm cooked barley in a pan with a splash of water.
  3. 3Dress barley and rocket with vinegar and oil.
  4. 4Top with roasted tomatoes, Parmesan, and basil.
