Warm Roasted Vegetable Couscous

Giant couscous tossed with roasted Mediterranean vegetables, chickpeas, and a lemon-herb dressing.

Method

  1. 1Roast vegetables with oil and cumin at 200°C / 400°F for 20–25 min.
  2. 2Cook couscous per packet; drain.
  3. 3Toss warm couscous with chickpeas, roasted veg, lemon, oil, and parsley.
  4. 4Season and serve.
