Roast Chicken & Vegetable Tray Bake

Herby chicken thighs roasted with courgette, peppers, and cherry tomatoes all on one tray.

Method

  1. 1Toss all vegetables and garlic with oil, salt, and spices on a large tray.
  2. 2Nestle chicken on top; season and drizzle with oil.
  3. 3Roast at 200°C / 400°F for 25 min until chicken is cooked through and skin is golden.
  4. 4Squeeze lemon over before serving.
