Salmon & Pesto Pasta

Flaked salmon stirred through pasta with fresh pesto, cherry tomatoes, and rocket.

Method

  1. 1Cook pasta in salted boiling water; reserve a cup of pasta water before draining.
  2. 2Pan-cook salmon 3–4 min per side; flake into chunks.
  3. 3Toss drained pasta with pesto, a splash of pasta water, tomatoes, and rocket.
  4. 4Fold in salmon gently; adjust seasoning.
  5. 5Serve with Parmesan and lemon.
