Courgette boats filled with spiced turkey mince, cherry tomatoes, and melted mozzarella.

Method

  1. 1Halve courgettes lengthways; scoop out centres; chop the flesh.
  2. 2Fry turkey with garlic, herbs, courgette flesh, and tomatoes; season.
  3. 3Fill courgette boats; top with mozzarella.
  4. 4Bake at 190°C / 375°F for 18 min until courgette is tender.
  5. 5Scatter basil.
